1. Simplicity in cooking is subjective and defined by the S-I-M-P-L-E framework

This idea, then – that there’s more than one way to get a meal on the table and that everyone has a different idea of which way is simple – is what Ottolenghi SIMPLE is all about.

A personalized approach. Simplicity is not a one-size-fits-all concept; it depends entirely on the cook's personality, lifestyle, and immediate needs. While one person finds a 30-minute weeknight stir-fry simple, another prefers a slow-cooked stew that simmers unattended for hours. To accommodate these diverse styles, the book introduces a color-coded acronym system that categorizes recipes based on different dimensions of ease.

The SIMPLE acronym. Each letter represents a distinct pathway to stress-free cooking, allowing readers to choose recipes that align with their specific constraints:

  • S (Short on time): Dishes ready in under 30 minutes.
  • I (10 ingredients or less): Minimal shopping and prep.
  • M (Make ahead): Elements prepared in advance.
  • P (Pantry): Utilizing everyday household staples.
  • L (Lazy): Slow-cooked, hands-off, one-pot meals.
  • E (Easier than you think): High-impact, low-effort showstoppers.

Liberating the home cook. By breaking down the barriers of traditional, rigid recipes, this framework empowers cooks to mix and match techniques. It proves that abundance, freshness, and surprise do not require culinary martyrdom. Ultimately, understanding your personal cooking style is the ultimate key to finding joy and relaxation in the kitchen.

2. Ten signature "flavour bombs" can instantly elevate basic ingredients

Simple cooking is often about injecting as much flavour as possible into a dish in a way that is quick and easy.

The power of ingredients. You do not need complex techniques or hours of simmering to create bold, memorable flavors. Instead, relying on a curated selection of high-impact ingredients can instantly transform a simple plate of vegetables, grains, or proteins. These ingredients act as culinary shortcuts, delivering acidity, sweetness, umami, and depth with just a single spoonful or sprinkle.

The ten essentials. The book highlights ten specific "Ottolenghi" ingredients that have long shelf lives and are used repeatedly to create maximum impact:

  • Sumac & Za'atar: For tangy, herbal, and citrusy notes.
  • Urfa Chilli Flakes & Rose Harissa: For smoky, complex heat.
  • Pomegranate Molasses & Barberries: For sweet-sharp acidity.
  • Tahini & Black Garlic: For rich, nutty, and umami depth.
  • Preserved Lemon & Ground Cardamom: For vibrant, aromatic highlights.

Transformative culinary shortcuts. These ingredients are not exotic novelties but practical tools for the modern kitchen. They allow you to keep the ingredient list short while ensuring the final dish remains distinctly vibrant and surprising. By stocking these ten items, you unlock the ability to turn basic weeknight meals into celebratory feasts.

3. Smart prep and "make-ahead" strategies preserve freshness while eliminating stress

The joy of make-ahead recipes is that, with the knowledge that most of the work is done, you can then actually be in the moment when it comes to serving and enjoying a meal.

Stress-free hosting. The secret to effortless entertaining lies in separating the preparation phase from the serving phase. Many home cooks ruin their own dinner parties by trapping themselves in the kitchen, frantically cooking à la minute. By choosing recipes with "make-ahead" potential, you can complete the heavy lifting hours or even days in advance, leaving only minimal assembly before serving.

Practical prep techniques. Getting ahead does not mean sacrificing the vibrant freshness that defines great food. The book outlines several clever ways to prepare components without compromising quality:

  • Toasting nuts and seeds days in advance and storing them in airtight containers.
  • Blistering, roasting, or blanching vegetables ahead of time and bringing them to room temperature before serving.
  • Rolling meatballs or marinating meats in the fridge 24 to 48 hours before cooking.
  • Picking herb leaves in advance and keeping them fresh under damp paper towels.

Hanging out together. Ultimately, sharing a meal is about connection and hospitality, not restaurant-style perfection. Guests do not expect a home cook to act like a stressed-out professional chef checking plates at the pass. Preparing sauces, grains, and dressings ahead of time ensures you can actually sit down, pour a glass of wine, and enjoy your own party.

4. "Lazy" cooking leverages heat and time to build deep flavors with minimal effort

Lazy cooks are off busy doing something else while the meal is making itself.

Hands-off culinary magic. Lazy cooking is the art of letting time and heat do the heavy lifting while you focus on other aspects of your life. It reframes slow-cooking not as a tedious chore, but as the ultimate luxury for busy people. By spending just a few minutes on initial prep, you can walk away for hours and return to a house filled with rich, comforting aromas.

One-pot and slow-roast wonders. This style of cooking relies on robust ingredients and simple vessels to minimize active labor and cleanup:

  • Whole-roasted celeriac left in the oven for three hours to caramelize in its own juices.
  • Slow-cooked lamb shoulder that braises for over six hours until it falls off the bone.
  • One-pot stews and traybakes that combine proteins and vegetables in a single dish.
  • Oven-baked rice dishes that eliminate the anxiety of stovetop monitoring.

Maximum flavor, minimum dishes. The beauty of these lazy dishes is their efficiency and depth of flavor. As ingredients cook slowly together, their juices mingle and concentrate, creating complex sauces without the need for constant stirring or reduction. It is the perfect approach for cozy weekend afternoons or busy days when you want a spectacular meal with zero last-minute stress.

5. A curated pantry turns everyday staples into vibrant, spontaneous meals

There’s something particularly satisfying about making a meal out of what you already have around.

The spontaneous kitchen. A well-stocked pantry is a cook's best defense against decision fatigue and uninspired takeout. When your shelves are lined with versatile, long-lasting staples, a delicious meal is always only 20 minutes away. The key is to view pantry cooking not as a compromise, but as a creative opportunity to highlight simple, robust ingredients.

Everyday pantry heroes. The book assumes a basic foundation of accessible ingredients that can be combined with fresh produce for quick, high-impact meals:

  • Tins of pulses like chickpeas, butterbeans, and lentils for instant protein and texture.
  • Dried pasta and rice to serve as comforting, versatile canvases.
  • Tinned tuna and anchovies to inject instant savory depth and saltiness.
  • Greek-style yoghurt, lemons, garlic, and onions to provide acidity, creaminess, and aromatics.

Versatility and adaptation. Pantry-led cooking encourages flexibility and a "fridge-raid" mentality. If a recipe calls for tarragon but you only have basil, or if you need to swap one type of canned bean for another, the dish will still succeed. This adaptability reduces food waste, saves money, and builds intuitive cooking skills that make everyday meal preparation feel like second nature.

6. "Easier than you think" dishes demystify restaurant-style presentation

These both read as though they should be served in a smart restaurant, but you’ll be amazed by how easy they actually are.

Demystifying the gourmet. Many home cooks are intimidated by fancy culinary terms or elegant restaurant presentations, assuming they require professional training. However, some of the most visually stunning and sophisticated-tasting dishes are actually the simplest to execute. By mastering a few basic combinations of temperature, texture, and color, you can create "gourmet" meals with minimal effort.

High-impact, low-effort techniques. The book highlights several dishes that look incredibly impressive but rely on straightforward assembly:

  • Burrata with chargrilled grapes: A simple contrast of cold, creamy cheese and warm, blistered fruit.
  • Trout tartare with burnt butter: Fresh raw fish elevated by a quick, nutty, warm butter drizzle.
  • Beef tomato carpaccio: Paper-thin tomato slices dressed with a vibrant, raw ginger and spring onion salsa.
  • Whole-roasted cauliflower: A dramatic, rustic centerpiece that requires nothing more than boiling and roasting.

The illusion of complexity. These recipes prove that great cooking is often about curation rather than labor-intensive processes. By pairing contrasting elements—like hot charred cherry tomatoes over fridge-cold yoghurt—you create an exciting sensory experience that feels highly intentional. It is a liberating realization that allows any home cook to serve restaurant-quality food without the associated stress.

7. Vegetables deserve center-stage abundance rather than side-dish status

Cooking, for me, has always been about abundance, bounty, freshness and surprise.

Elevating the humble green. Vegetables should never be treated as a boring, obligatory afterthought on the side of a plate. When prepared with the right techniques and bold seasonings, they possess a depth of flavor and texture that can easily anchor a meal. By roasting, charring, steaming, or crushing them, you unlock their natural sweetness and create satisfying, complex dishes.

Innovative vegetable techniques. The book showcases how simple interventions can completely redefine familiar vegetables:

  • Charring and blistering: Bringing out the smoky sweetness of cherry tomatoes or broccoli.
  • Crushing and mashing: Combining steamed courgettes with garlic and herbs for a rustic, spreadable texture.
  • Raw and cooked contrasts: Mixing roasted cauliflower florets with raw grated cauliflower for a dynamic "tabbouleh."
  • Bold dressings: Drizzling mustardy cheese sauces or green tahini over whole-roasted brassicas.

A celebration of color. Serving vegetables in abundance creates a visual feast that immediately stimulates the appetite. Whether it is a vibrant salad of watermelon, green apple, and lime, or a comforting dish of slow-cooked runner beans in tomato sauce, these recipes prioritize color and freshness. They prove that plant-based eating can be incredibly indulgent, satisfying, and endlessly varied.

8. Grains, pulses, and pastas are dynamic canvases for contrasting temperatures and textures

Cooking rice perfectly is one of those things that shouldn’t be complicated but can be surprisingly difficult, for some, to get right.

The ultimate comfort foods. Grains, pulses, and pastas are the workhorses of the kitchen, providing satisfying substance and absorbing flavors beautifully. However, they can easily become heavy or monotonous if not paired with contrasting elements. The key to elevating these staples is to introduce bright acids, crunchy toppings, and dramatic temperature contrasts that wake up the palate.

Dynamic starch strategies. The book offers several clever methods to make grains and pastas feel fresh and exciting:

  • Foolproof baking: Cooking rice in the oven under tightly sealed foil to guarantee fluffy, perfect grains every time.
  • Textural toppings: Garnishing soft bulgur or baked rice with crispy ginger, toasted peanuts, or pomegranate seeds.
  • Temperature play: Swirling cold, herb-infused yoghurt through warm Puy lentils and roasted aubergines.
  • One-pot pasta risottos: Cooking orzo directly in stock and tomato juices with prawns and marinated feta.

Balancing richness and freshness. By pairing earthy starches with vibrant herbs, sharp cheeses, and citrusy dressings, you prevent the dishes from feeling too heavy. A simple bowl of gigli pasta becomes a revelation when tossed with crispy chickpeas, anchovies, and a generous sprinkle of za'atar. These combinations turn humble pantry staples into complex, multi-dimensional meals.

9. Showstopping desserts can be achieved through effortless assembly and minimal baking

Three components here, I know, but they’re all quick and simple to do, can all be made well in advance, and there’s no work to do on the day apart from some pretty informal assembly.

Effortless sweet endings. A great dessert should be a celebratory finale, not a source of late-night kitchen anxiety. While professional pastry baking requires scientific precision and rigid timelines, home desserts can be wonderfully informal and rustic. By focusing on high-quality fruit, simple custards, and clever textures, you can create showstopping puddings with minimal active effort.

Simple dessert formulas. The book champions desserts that rely on smart prep and straightforward assembly rather than complex baking techniques:

  • Deconstructed cheesecakes: Layering a quick, whipped cream cheese and feta mixture with a make-ahead hazelnut crumble and cherry compote.
  • No-churn ice creams: Whipping up a luxurious raspberry ice cream that sets beautifully in the freezer without an expensive machine.
  • Fruit-forward bakes: Pouring a simple almond friand batter over fresh plums and blackberries for a rustic, bubbling traybake.
  • Roasting fruits: Baking strawberries with sumac or figs with thyme to concentrate their natural sugars and create instant syrups.

The beauty of imperfection. These sweet treats embrace a rustic, imperfect aesthetic that feels incredibly inviting. A blueberry, almond, and lemon loaf cake looks all the more beautiful when the berries bleed naturally into a simple glaze. By removing the pressure of pastry-chef perfection, baking becomes a relaxing, joyful extension of the meal.
